The methods of drying chili and pepper are different
By Twesix Chili Drying Machine
Chili: put chilis on the dehydrator trays and set the temperature to around 125°F (52°C). Allow the peppers to dry for several hours or until they are completely dry and crisp.
Pepper: while drying pepper, the drying temperature can't be set as high as drying chilis. At early drying stages, the temperature had better be 86°F-104°F(30°C to 40°C), and meanwhile control the humidity well, which can retain the color and aroma of dried pepper.
Check for Dryness: To check if the peppers are fully dry, they should be brittle and easily crumble when touched. If they still feel soft or pliable, they need more drying time.
Store the Dried Peppers: Once the peppers are completely dry, you can store them in airtight containers or resealable bags. Keep them in a cool, dark, and dry place to maintain their flavor and quality. Dried peppers can last for several months to a year if stored properly.
Note: It's important to handle hot peppers with caution, as they can cause skin irritation and eye discomfort. Wear gloves when handling hot peppers and avoid touching your face or eyes.
Please keep in mind that drying peppers can intensify their heat, so be mindful of the spiciness when using them in recipes.
