How to Dehydrate Ginger by Twsix Ginger Hot Air dryer?

Ginger drying test information:
Setting temperature: 63℃,
Setting relative humidity: 10%.
Processing with 5 methods as below for drying:
1. Slices with 1.5mm thickness (made by sample vegetable slicer): take about 2 Hours for drying;
2. Slices with 2.5mm thickness (made by sample vegetable slicer,steam before drying): take about 2.5 Hours for drying;
3. Slices with 2.5mm thickness (made by sample vegetable slicer): take about 3 Hours for drying;
4. Slices with more than 3mm thickness (hand cutting,nonuniform ): take about 5 Hours for drying;
5. Other big size ginger pieces (with skin, nonuniform ): some take about 5 Hours for drying, and other thicker one may take more long time.
The steamed ginger slices will keep the golden yellow color, with higher hardness, and more crisp. Normally, The steamed ginger will be drying fast than without steamed one. It is one kind of deactivation of enzymes processing method. The dried ginger slices will regain moisture when they are in direct contact with the air, so a sealed package is required. If you use vacuum packaging, you can better preserve the color and aroma of pineapple slices.
